A beautiful, quiet day in the Green View Village. Our cozy corner of Oak Ridge. School is officially out so no more school buses for a couple of months, at least not the regular ones. I don’t know if summer school runs a bus or not. I imagine we will see kids playing out in the yards now, and balls rolling here and there. The boy next door plays basket ball and has a hoop in their yard. He and his buddies are pretty good at that game. It is fun to watch them play.
Dinner is in the crock pot. We are having Chicken and rice. This is the first time I have put it in the crockpot but I am thinking it won’t be the last. It smells wonderful, is easy and a I don’t have the oven on. This time there will be gravy and soft rice and tender chicken. When made in the oven the rice tends to not get perfectly done and the soup and water evaporate to fast making it on the dry side. I will serve peas and carrots with this. The two pieces of chicken seem to not of shrunk so it should be a perfect dinner. I hope.
